cupcakes

First of all, MERRY CHRISTMAS!

Secondly, I know I haven't been on here much lately. I guess there has been a lot going on, but also I haven't had much to say.

I thought I would tell you all the story of my Thanksgiving cupcakes (since apparently I can't escape it).

On Thanksgiving this year we had Mark's family and my parents over for our first-ever holiday get together in our house. It was a ton of work and really exhausting but we made it through. One of my responsibilities is typically desserts, so naturally I made a few for this occasion as well. I had an apple pie (Thanks Katie Cab!), pumpkin pie, pumpkin cheesecake, and pumpkin cupcakes with cream cheese icing. Delicious. Not that anyone would know that because nobody ate any cupcakes (except for Mark's nephew and me). The reason nobody ate any is because I was honest with them and explained my need for aesthetically pleasing visuals in the dessert arena.

Is that confusing? Allow me to explain. The night before everyone came over, I was in the kitchen baking for a good part of the night. My apple pie didn't turn out quite right because where it said to use 1 1/4 TEASPOONS of flour, I used 1 1/4 CUPS. Whoopsie. It wasn't a total fail because it still tasted good but it just was a little dry. So I'm already really frustrated that I completely messed that part up so when our dog Ozzy decided to hop onto a chair and stretch his little body just far enough to lick the icing off a few cupcakes when nobody was looking, I was really pissed. I had already set them out in this beautiful cupcake tower display and eaten gotten rid of the extras. Therefore, I had no extra cupcakes to replace the ones that he licked, so I decided I would just re-ice them, draw black dots with permanent marker on the cupcake paper, and let everyone know they shouldn't eat those. Just to keep the artistic balance you know?

So I did just that--re-iced em and put em back on the tower. The next day, I let everyone (apparently not everyone though) know what had happened and to not eat the cupcakes with the black dot. Simple enough right? Not only did nobody eat any of my amazing cupcakes but it is ALL I have heard about since then. In addition to hearing it from just about every member of Mark's family and extended family, at Mark's sister's house tonight I was video-interviewed for the exact story so that it will be documented for all time.

Moral of the story: Next time I will just re-ice them and not tell anyone! HA!
